
I have a love for avocados (especially avocados from Mexico). I could eat them morning, day and night if I had them available. I love 'em on eggs, with tortillas and queso fresco, on a tostada with cotija cheese and my new favorite avocado recipe - as the main ingredient in my mom's Salsa de Aguacate (Avocado Salsa).
There aren't many of my mom's recipes that I can duplicate and know that it's going to come out just like she makes it. This one, however, is a #NoFail recipe. I love the simplicity of the recipe and how easily it can be duplicated, multiplied, divided, etc.
First up are the ingredients: jalapeños, tomatillo, cilantro, salt, lemon (not pictured), water and avocado.
Chop up everything coarsely (except for the lemon), toss in the blender with a couple of tablespoons of water, season with lemon and salt and voila! You just made the easiest and tastiest avocado salsa.
Ingredients
1 Tomatillo
3 Jalapeños
1/4 c. Cilantro
1/2 Avocado (pitted)
4 tbsp. water
Lemon and salt to taste
Preparation
1. Coarsely chop tomatillo and jalapeños.
2. Add tomatillo, jalapeño, cilantro, water and avocado into blender.
3. Blend
4. Add lemon and salt to taste
This recipe is so easy I believe it should be a staple in everyone's recipe book. So much so that I entered it on Avocado from Mexico's website. If you have a favorite avocado recipe, I suggest you do the same!
